Chips, Powders and Rehydration

Chips are a pack count; a powder is the solids and almost no water; a heat blend is a weighted average.

Opens on the book's Stall Batch. Change any number to your own and press Calculate.

A. Chips into packs

B. A powder (optional)

C. A heat blend by Scoville rating (optional; ratings vary widely)

Enter the chips and press Calculate.

The formula

  • Packs = dried ÷ fill, rounded down; spare = dried − packs × fill; per tray = dried ÷ trays
  • Seasoning % = seasoning ÷ fresh × 100; in a pack, about seasoning × fill ÷ dried (if it spreads evenly)
  • Powder = fresh × (1 − water %) ÷ (1 − powder's water %) × (1 − grinding loss %). Fresh in a teaspoon = teaspoon g × fresh ÷ powder
  • Heat blend = Σ (parts × rating) ÷ Σ parts: a weighted average
The book's worked example, Chapter 9. 365.2 g of Cinnamon Apple Chips ÷ 30 g = 12 packs, labeled Net wt 1 oz (28 g), with 5.2 g spare. That is only 36.5 g of chips a tray: chips are tray-hungry. The cinnamon is 0.5 % of the fresh slices: 11 g.
Check it. Packs × fill + spare = the dried weight. For a powder, the solids are the same before and after; only the water changes.

Honest limits. Scoville ratings are published as wide ranges and vary from one chili to the next: a blend's figure is a rough guide, so taste a pinch. Powders take up moisture from the air: pack them airtight. Rehydrating food that soaks for more than 2 hours belongs in the fridge (CSU).
