A. Chips into packs
B. A powder (optional)
C. A heat blend by Scoville rating (optional; ratings vary widely)
The formula
- Packs = dried ÷ fill, rounded down; spare = dried − packs × fill; per tray = dried ÷ trays
- Seasoning % = seasoning ÷ fresh × 100; in a pack, about seasoning × fill ÷ dried (if it spreads evenly)
- Powder = fresh × (1 − water %) ÷ (1 − powder's water %) × (1 − grinding loss %). Fresh in a teaspoon = teaspoon g × fresh ÷ powder
- Heat blend = Σ (parts × rating) ÷ Σ parts: a weighted average
Honest limits. Scoville ratings are published as wide ranges and vary from one chili to the next: a blend's figure is a rough guide, so taste a pinch. Powders take up moisture from the air: pack them airtight. Rehydrating food that soaks for more than 2 hours belongs in the fridge (CSU).
