Enter your kitchen's temperatures, then press Calculate.
From the book — Chapter 6. Water = 3 × target − kitchen − flour − friction. With a preferment it is 4 × target, and you subtract its temperature too. Measure your own friction factor: 3 × the dough's real temperature, minus the other three.
All in degrees Celsius. A friction factor is a difference, so it converts from Fahrenheit by ÷ 1.8 with no 32. Everything stays in your browser — no sign-up, nothing stored.
