How it works

Beans and chickpeas: about 2 cups dried to a pound, and 1 cup dried makes about 3 cups cooked, so a pound makes about 6 cups; a 15-oz can drains to about 1 1/2 cups (USDA’s weighing of a drained can, 254 g, is nearer 1 2/3). Long-grain white rice: 1 cup dry (about 185 g) makes about 3 cups cooked. Pasta weighs about 2 to 2 1/2 times as much cooked. Lentils gain about three times their weight. The water absorbed is the cooked weight minus the dry weight.

From the book, Chapter 14. A pound of dried chickpeas makes about 6 cups cooked, 4 cans’ worth; two cans’ worth needs about 1 cup dried. 3 cups of cooked rice starts as 1 cup dry (185 g). 8 oz of dry pasta cooks to about 16 to 20 oz. 200 g of lentils takes in about 400 g of water. USDA’s drained can is 1.67 cups. Every chapter and its calculator →
