Price, Profit and Break-Even

A market day's profit is what's left after materials, the stall and the card fees. Fixed costs ÷ that = the days to break even.

The formula

  • Markup = (price − cost) ÷ cost; margin = (price − cost) ÷ price
  • Card fees = takings × card share × fee % + sales × card share × the fee a sale
  • Profit a market day = takings − materials − stall fee − card fees
  • Break-even = fixed costs ÷ profit a day, rounded up (SBA). Over materials an hour = units × (price − materials) ÷ hands-on hours
The book's worked example, Chapter 12. One Stall Batch sells for 309.00: 15 × 7 + 12 × 3 + 24 × 7. Materials 111.99, stall 60, card fees 7.84: 129.16 for the market day. 801 of first-year fixed costs ÷ 129.16 = 6.2, so break-even after 7 market days. Once you pay yourself 20 an hour, the chips cost 4.13 to make against a price of 3. A worked example, not a promise.
Check it. Takings − materials − stall − card fees must equal the day's profit; break-even days × the day's profit must reach the fixed costs.

Honest limits. The prices (7, 3 and 7) are the book's choice after a market check, not data. The registration fee is one state's figure; yours varies, and some places do not let home kitchens sell jerky at all. The card fee is one common in-person rate (2.6 % + 0.15), October 2026; check yours. Profit here is before paying yourself and before tax. Prices are illustrative US prices from October 2026, shown without a currency sign; put in your own. Everything stays in your browser: no sign-up, nothing stored.
